To shrink the TV screen with the Apple app, adjust the magnification by tapping the Touch surface and dragging up or down with two fingers. To limit the maximum magnification, go to Settings > General > Accessibility > Zoom > Maximum Zoom Level.

For content from a Mac or Apple TV that doesn't fit on the TV or projector, it can be adjusted for underscan or overscan in the Mac's System Settings.
